Winemaker
Maison Salasar
Languedoc-Roussillon, France
A house founded in 1890 by Joseph Salasar in Campagne-sur-Aude, in the upper Aude valley at the foot of the Pyrenees. Three generations of the family specialised in the sparkling wines of Limoux (Blanquette and Crémant); today the house belongs to Domaines Bonfils. The Domaine Beausoleil vineyards (around 60 ha) lie at 300–500 m and are the historic cradle of the Crémant de Limoux appellation – Mauzac, Chenin, Chardonnay and Pinot, some vines over a century old, giving the wines their freshness.
